Vision for food metabolomics: When will the metabolome of foodstuff be elucidated?

This question is addressed in the newest publication of the Chair of Analytical Food Chemistry where perspectives for the elucidation of several “dark matter” are presented. The predictions are based on the hypotheses of futurologist Ray Kurzweil as well as metabolomics data from databanks together with performance data of current LC-MS instruments.

These predictions were presented in the keynote lecture at RAFA 2019 by Michael Rychlik.
